  • ¾ cup Queso de Bola
  • 2 cups mayonnaise
  • Half cup pimiento

  • 4 garlic cloves, minced
  • 1 red or white onion, minced
  • 1 tsp ginger, minced
  • 1 tbsp oil
  • Siling labuyo, minced
  • Salt and black pepper, according to taste
  • 2 fried eggs

Instructions:

  • Chop the leftover pork Lechon. You can opt for larger chunks or tidbits.
  • Mix soy sauce, salt, half of the calamansi juice and onions. Add the siling labuyo. 
  • Add the chopped lechon to the previous mixture. Set aside.
  • Add oil to a heated frying pan. Then cook the garlic and ginger.
  • Put the lechon and soy sauce mix into the frying pan and keep mixing so it doesn’t burn. When you’re satisfied, add the mayonnaise and black pepper.
  • Serve into a plate. You can now add the remaining calamansi.
  • Add fried eggs if desired.

Ham and Cheese Quesadilla

  • Add the potatoes, chicken, and the previous mixture into the pan.
  • Top it off with the grated cheese and bake until the cheese is melted.
