Last December 15, Chef Mark Joseph Bartolome, known as Chef Marky, went live on TikTok to share practical cooking tips for a #PaskongPraktikal celebration. Using Hanabishi appliances, he showed how holiday cooking can be more efficient and enjoyable, even during the busiest days of the season. He also shared simple preparation tips and words of encouragement for home cooks doing their best this Christmas. 

With over a decade of cooking experience locally and abroad, Chef Marky brings solid kitchen know-how to everyday meals. He is a graduate of the Culinary Arts at De La Salle—College of St. Benilde, known as a food content creator who focuses on approachable, home-friendly recipes. His cooking Philosophy reflects Hanabishi’s belief that meaningful meals don’t need to be expensive to feel grand.

Inspired by Chef Marky’s practical holiday cooking tips, we’ve put together this festive yet easy lineup to help you prepare a delicious Christmas spread for your family. Follow the steps below to create delicious treats everyone is sure to enjoy.

Cola Beef Stew with Mashed Potato

A Cola Beef Stew with Mashed Potato brings that rich, slow-cooked comfort Filipinos love. It has the sweet-savory flavors familiar to every Noche Buena celebration. The cola helps tenderize the beef and deepen the sauce, making it a satisfying handaan dish that pairs well with creamy mashed potatoes.

Using the Hanabishi 18-in-1 Pressure Cooker, you can make up to six servings of delicious Cola Beef Stew. Its electronic controls and wide range of cooking modes make meal preparation easier and quicker to accomplish.

What You Need:

  • 1 kg Beef Shortribs
  • 1 Whole Garlic
  • 2 Pieces White Onions
  • 3 Stalks of Celery
  • 3 Stalks of Leeks
  • Salt
  • Pepper
  • 3 Pieces of Bay Leaf
  • A pinch of Dried Thyme Leaves
  • 1 Piece of Beef Cubes (Stock)
  • 2 Cans of Cola (Coke)
  • 1 Liter of Water
  • 3 Tbsps of Liquid Seasoning
  • 2 Carrots
  • 1 Whole Broccoli
  • Potatoes
  • 2 Cups of Milk
  • 1 Cup of Butter
  • Parsley for Garnish
  • ½ Cup of Flour

How to Prepare It:

  1. Wrap the potatoes with foil and bake in the oven for 1 hour at 200 °C.
  2. Season the short ribs with salt and pepper. Coat in flour.
  3. Sear the short ribs on both sides.
  4. While searing, chop the garlic, onions, leeks, celery, and carrots.
  5. Add the vegetables and saute together with the beef.
  6. Add bay leaf and thyme.
  7. Add the cola and reduce.
  8. Add water and beef cubes. Boil for 5 minutes.
  9. Place the short ribs inside the pressure cooker. Pressure cook for 15-20 minutes.
  10. Prepare the vegetables, blanch the broccoli and carrots, then place them in ice.
  11. In a pan, melt some butter, add garlic, and throw in the vegetables. Season them for extra flavor.
  12. In a pan, heat milk with butter. Then, proceed to season them with salt and pepper.
  13. Remove the potatoes from the oven, cut them in half, and remove the skin.
  14. In a bowl, mix the potatoes with the heated milk and butter. Whisk the mix until smooth and creamy.
  15. Release the pressure cooker.
  16. Transfer the cola short ribs to a pot.
  17. Thicken with flour and butter.
  18. Serve and enjoy!

What You Need:

  • 2 Sachets of Black Coffee
  • ½ Cup of Hot Water
  • 2 Tbsps. Of Sugar
  • 1 pack of Graham Crackers (approx.10 pieces)
  • 1 bar of Softened Cream Cheese
  • 1 Pack of All-Purpose Cream
  • 1 Can of Condensed Milk
  • Cocoa Powder (Hershey’s Dark) For Dusting

How to Prepare It:

  1. In the stand mixer, combine the cream cheese, all-purpose cream, and condensed milk, then whip until smooth and creamy. Set aside.
  2. In a separate bowl, dissolve the coffee in hot water.
  3. Lightly dip the graham crackers into the coffee and arrange them in a baking dish.
  4. Spread a layer of the cream mixture over the graham, allowing it to soak slightly.
  5. Repeat the layering until you reach your desired height.
  6. Finish with a light dusting of cocoa powder on top.
  7. Refrigerate for about an hour, or until set.
  8. Slice, plate, and share it with your loved ones!
