  • ¾ cup Queso de Bola
  • 2 cups mayonnaise
  • Half cup pimiento
  • White sugar or alternative sweetener, according to taste
  • Salt, according to taste
  • Loaf bread slices, white or wheat


  • Grate your leftover Queso de Bola until you have ¾ cups.
  • Mix it with mayonnaise until combined well.

  • 1 tsp ginger, minced
  • 1 tbsp oil
  • Siling labuyo, minced
  • Salt and black pepper, according to taste
  • 2 fried eggs


  • Chop the leftover pork Lechon. You can opt for larger chunks or tidbits.
  • Mix soy sauce, salt, half of the calamansi juice and onions. Add the siling labuyo. 
  • Add the chopped lechon to the previous mixture. Set aside.
  • Add oil to a heated frying pan. Then cook the garlic and ginger.
  • Put the lechon and soy sauce mix into the frying pan and keep mixing so it doesn’t burn. When you’re satisfied, add the mayonnaise and black pepper.
  • Serve into a plate. You can now add the remaining calamansi.
  • Add fried eggs if desired.

Ham and Cheese Quesadilla

  • 2 cups leftover cooked chicken, chopped
  • 2 cups cooked potatoes, diced
  • 1 cup white onion, chopped

  • 3 tbsp softened butter
  • 2 tbsp flour
  • Salt, according to taste

  • Pre-heat oven to 180° Celsius
  • Grease a 1.3-liter baking dish. You can use a casserole pan, but if you don’t have one you can substitute a cake or a loaf pan.
  • Heat the butter in a frying pan and add the onions and mushrooms and sauté.
  • Add the flour and stir continuously until incorporated. Slowly add the milk while stirring.
  • Add the salt and pepper when the mixture is slightly thick.
  • Add the potatoes, chicken, and the previous mixture into the pan.
  • Top it off with the grated cheese and bake until the cheese is melted.
  • Let it cool before serving.
