Frittata with Summer Vegetables

Frittata with Summer Vegetables

I know what you’re thinking: how could a slow-cooked dish like frittata be cooked in a rice cooker? Since the rice cooker is largely automatic, cooking it is a breeze! This rice cooker recipe also uses a microwave if you don’t have a pan.

Ingredients:

  • 1 clove garlic, peeled
  • 1 small red or yellow pepper, diced
  • 1 small potato, peeled and finely julienned
  • 1 small zucchini, thinly sliced
  • Salt and pepper
  • 2 tbsp olive oil
  • 6 large eggs
  • 2 tbsp grated cheese

Note: You may pre-cook the vegetables, or use leftover cooked vegetables.

Steps:

  1. Cook the vegetables. Put 1 tbsp of olive oil in a pre-heated frying pan. 
  2. Add the garlic and cook till lightly browned, then add the vegetables.
  3. Season with salt and pepper then set aside.
  4. Spread 1 tbsp of olive oil on the bottom and sides of the rice cooker bowl.
  5. Add the eggs, grated cheese, salt, and pepper, then beat the eggs.
  6. Add the vegetables and spread them evenly.
  7. Place the bowl inside the rice cooker and turn it on.
  8. After a full cycle, put on a plate and serve while warm.

Note: If you don’t have a pan or pre-cooked veggies, you can put the veggies on a plate, season with olive oil, salt, and pepper, cover with a plastic film, and put them in the microwave. Use the high setting and cook for 5-6 minutes.

Chicken Curry

If you’re a chicken curry lover, don’t underestimate this rice cooker version yet! This recipe creates chicken curry with nothing but the cooking power of a rice cooker. The ingredients are easy to find and the instructions are not difficult. Next time you have a craving for a quick curry, try this recipe! It takes approximately 30 mins to prepare and has 4 servings.

Ingredients:

  • 2 tbsp oil
  • 1 cup chopped onion
  • 1 tbsp minced garlic
  • 2 tbsp curry powder
  • 2 cups water
  • 1 8 oz. can of tomato sauce
  • 1 8 oz. package of Zatarain’s jambalaya mix
  • 1 lb boneless, skinless chicken breast, cut into cubes
  • ½ cup golden raisin
  • ¾ cup plain yogurt
  • ⅓ cup chopped cashews

Steps:

  1. Press the cook button and place oil in the pan.
  2. Add the onion and garlic and cook for 5 minutes.
  3. Add the curry powder, then cook and stir for 2 more minutes.
  4. Put in the water, tomato sauce, jambalaya mix, chicken, and raisins.
  5. Mix well before closing the lid and pressing cook.
  6. After the cycle, turn off the rice cooker and mix in yogurt.
  7. Let the mixture stand for 5 minutes, then sprinkle with cashews.
  8. Serve.

Char Siu

Char Siu

You read that right! With the help of a frying pan and a rice cooker, you can make Chinese-style roast pork without an oven. Cook the rice cooker version of this main dish with less effort but almost the same flavor. Enjoy the taste of this dish quickly without using a slow cooker!

Ingredients:

  • 350 grams pork, thin block for making roast pork
  • 40 ml soy sauce
  • 100 ml sake
  • 100 ml mirin
  • 50 ml water
  • 1 pc ginger
  • 1 clove garlic

Steps:

  1. Ready the thin block of pork.
  2. Cook in a frying pan until the surface is browned. No need to cook the whole block through.
  3. Transfer the rice cooker.
  4. Mix the soy sauce, sake, mirin, water, ginger, and garlic with the pork. If you have other spices you want to try, feel free to add them in the mix.
  5. Close the lid and cook.
  6. When it’s done, slice and serve while warm.

Puto With Cheese

You’ll need puto molds for this recipe, but if you prefer, you can also use a small cake pan or a leche flan molder. Just remember to cook the puto longer than usual.

  • 1  cup all-purpose  flour
  • 1 egg
  • ⅓  cup sugar
  • ¾ cup water
  • ¼ cup milk
  • 1 tbsp baking powder
  • 1 tbsp oil
  • Sliced cheese, for toppings

Steps:

  1. In a bowl, put in the flour, sugar, and baking powder. Set aside.
  2. In another container, whisk the egg, water, milk, and oil until well combined.
  3. While mixing, slowly incorporate the flour mixture. Continue whisking until everything is blended smoothly.
  4. Pour the mixture into the puto molds. Be careful not to overfill. Top with sliced cheese or your other preferred toppings.
  5. Place the filled puto molds into the steamer.
  6. Fill the rice cooker container with water halfway. Place the steamer on top and cover with the lid.
  7. Steam the puto for 7 minutes, or until it’s cooked. You can poke a toothpick into one of the puto to check if it’s done. If the mixture is wet, cook for a few more minutes. 
  8. Serve and enjoy!
