Filipino Style Pork BBQ is pork barbecue on bamboo skewers. It is made with sliced pork that is marinated in a special mixture of seasonings and sauces.

Ingredients

  • 12-inch bamboo skewers
  • 2 kilos pork shoulder, sliced into thin pieces
  • ¾ cup soy sauce
  • ¾  cup oyster sauce
  • ½ cup lemon or calamansi juice
  • ¾ cup banana ketchup
  • 4 tablespoons brown sugar
  • 1 teaspoon black pepper, ground
  • 1 ½ cups lemon or lime soda 
  • 1 whole garlic, minced

Cooking Instructions

  1. Arrange the pork slices in a large bowl.
  2. Combine the garlic, lemon or calamansi juice, soy sauce, sugar, banana ketchup, oyster sauce, lemon or lime soda, and black pepper. Mix well. 
  3. Cover the bowl and marinate for at least 3 hours. For best results, marinate the pork overnight. 
  4. Assemble the marinated pork on the bamboo skewers, around 5-6 pieces on each stick. 
  5. Prepare the basting sauce. The ingredients are the same as the marinade ingredients minus the soda. 
  6. Heat up the grill. 
  7. Grill on medium heat until cooked, basting and turning every few minutes on each side. 
  8. Serve as is or with vinegar dipping sauce. Enjoy! 

Inihaw na Bangus

Inihaw na Bangus simply refers to grilled milkfish. It is a delicious dish that is stuffed with onions and tomatoes. Ingredients

  • 1 whole bangus, with scales and guts removed
  • 3 ripe tomatoes, diced
  • 1 large onion, diced

  • 1 tablespoon ginger, minced
  • 2 teaspoons salt
  • 2 teaspoons black pepper, ground 

Cooking Instructions

  1. In a large bowl, combine the tomatoes, onion, pepper, and ginger. 
  2. Squeeze some lemon juice/calamansi in and add the black pepper. Stir.
  3. Wash the milkfish and pat dry using a paper towel.
  4. Prepare the fish and open an incision. It should be either above or below the belly area.
  5. Rub salt on the inside of the fish. 
  6. Stuff the mixture.
  7. Grill the fish in medium heat for about 10 to 12 minutes per side.
  8. Serve with soy sauce and calamansi or spicy vinegar.

  • ¼ cup brown sugar
  • 1 cup lemon or lime soda

Basting Ingredients

  • 3 tablespoons atsuete oil

  • 2 garlic cloves, peeled and pounded

Cooking Instructions

  2. Marinade for 1 to 3 hours or overnight.
  3. Preparing the basting sauce by mixing atsuete oil, margarine, annatto oil, garlic, salt, and lemon or calamansi juice. Set aside. 
  4. Grill the chicken until cooked through while basting both sides with the mixture from time to time.
  5. Transfer the grilled chicken to a serving plate.
  6. Serve with rice!

Hamburgers

  • ½ kilo lean ground beef
  • ¼ cup breadcrumbs

  • 1 teaspoon black pepper, ground
  • 1 teaspoon oil 
  • ¼ cup mayonnaise
  • 1 tablespoon ketchup
  • 4 pieces lettuce

  • 4 buns, sliced
  • ½ cup onions, sliced

Cooking Instructions

  9. Cook each side for 5 minutes or until cooked thoroughly. 
  10. Grill the buns if desired.
  11. Spread mayonnaise and ketchup on the buns and assemble the hamburger with lettuce, tomatoes, and onions. 
  12. Serve!
