Inihaw na Liempo

Pork belly

Inihaw na Liempo or Grilled Pork Belly is a pork dish marinated in lemon and soy sauce before grilling. It is a popular dish served in get-togethers such as beachside barbeques. Ingredients

  • 2 lbs. pork belly
  • ½ cup soy sauce
  • 1 piece lemon or 3-4 pieces calamansi
  • ½ teaspoon black pepper, ground
  • 1 teaspoon salt
  • 4 cloves garlic, crushed
  • ¼ cup banana catsup
  • 1 tablespoon oil

Instructions

  • Mix the pork belly with soy sauce, lemon, salt, black pepper, and garlic. Marinade the pork belly for 3 hours or overnight. 
  • Put the pork belly marinade in a bowl.
  • Add banana catsup and cooking oil. Stir well for the basting sauce.
  • Pour oil and grill the pork belly.
  • Baste the pork and flip constantly.  
  • Serve and enjoy with spiced vinegar or toyomansi sauce!

Lumpia

Ingredients

  • 50 pieces lumpia wrapper
  • 1 ½ lbs ground pork
  • 2 onions, minced
  • 2 carrots, minced
  • 1 ½ teaspoon garlic powder
  • ½ teaspoon black pepper, ground 
  • ½ cup parsley, chopped
  • 1 ½ teaspoon salt
  • 1 tablespoon oil
  • 2 eggs

Instructions

  • In a bowl, mix ground pork, onions, carrots, garlic powder, black pepper, parsley, salt, oil, and eggs.  
  • Scoop about 1 to 1 ½ tablespoons of filling and place it over the lumpia wrapper. 
  • Spread the filling and fold both sides of the wrapper. 
  • Brush a beaten egg on the wrapper. 
  • Perform the same steps until all the filling mixture is wrapped.
  • Load in the air fryer and set to 370°F 
  • Cook until crispy or golden brown.

Chicken Embutido 

Chicken Embutido

Need to serve a filling main dish? How does Chicken Embutido sound? It’s the original take of Filipinos to meatloaves. The only difference is, this one is juicier and tastier! Ingredients

  • 3 lbs. ground chicken
  • 1 large red bell pepper, minced
  • 1 large green bell pepper, minced
  • 1 large yellow onion, minced
  • 3 eggs
  • 1 8 oz. can tomato sauce
  • 1 cup raisins
  • 1 cup carrots, minced
  • ¾ cup cheddar cheese
  • 1 ½ cup bread crumbs
  • ¼  cup oil
  • ¼ cup sweet relish
  • ½ teaspoon black pepper, ground
  • 1 teaspoon salt

Instructions 

  • In a bowl, mix ground chicken, bell peppers, onion, raisins, carrots, sweet relish, cheese, and tomato sauce. 
  • Pour-in the oil, salt, and pepper. 
  • Put the eggs and bread crumbs. Continue to stir.
  • Wrap about 1 to ¼ cup of the mixture in aluminum foil. Repeat this step until all the mixture is used. 
  • Steam the chicken embutido for 45 to 60 minutes.
  • Let it cool down and slice. 
  • Serve on a plate. 

Macaroni Fruit Salad

When looking for holiday sweets on a Filipino menu, macaroni fruit salad your go-to. Don’t forget to serve this Filipino dessert because it’s a guaranteed crowd favorite. Impress your family with its sweet and creamy flavors. 

Ingredients

  • 2 cups elbow macaroni
  • 15 ounces fruit cocktail
  • ½ cup red kaong
  • ½ cup green kaong
  • 6 ounces cheese, cubed
  • 1 ¼ cups mayonnaise
  • 10 ounces condensed milk
  • 7 ounces table cream
  • pinch of salt

Instructions

  • Cook macaroni in a pot. Discard the water and set aside.
  • Prepare the dressing by mixing condensed milk, table cream, mayonnaise and. Stir well until the texture smoothens.
  • Combine macaroni, cheese, fruit cocktail, and kaong.
  • Pour the dressing into the bowl. Toss until all ingredients are well combined. 
  • Refrigerate for at least 1 hour.
  • Serve for dessert!
